The Glass Garden

The Glass Garden is a Michelin-starred restaurant built inside a glass-and-steel vault pressed against 14th-century castle walls on the Mönchsberg. The setting is unlike anything else in Salzburg: medieval limestone on one side, floor-to-ceiling glass on the other, with a Dale Chihuly blown-glass sculpture glowing at the centre.

The Story

The building’s premise is architectural tension. The vault follows the line of the old fortification walls of Schloss Monchstein, leaving the rough-cut stone exposed while inserting a modern steel-and-glass structure that floods the interior with daylight and, after dark, turns the room into a lit container suspended above the city.

Chef Simon Wagner, who arrived in 2024 with experience at multi-starred kitchens, runs seasonal tasting menus under the name “1350” - a reference to the approximate date of the walls around the restaurant. The four- to six-course formats draw on Austrian produce and change with the seasons.

The Chihuly sculpture is not incidental. The Chrysolite Aqua Tower, a hand-blown glass piece of around 140 components, catches both daylight and the restaurant’s own lighting across the course of an evening. It was commissioned to match the glass architecture and has become a signature of the space.

With only 40 seats, the room fills quickly during the Salzburg Festival when demand for serious dining on the right bank is intense. Booking several weeks in advance is the practical minimum during July and August.

Mönchsberg Park 26, accessible via the Mönchsberg lift from Anton-Neumayr-Platz or on foot from the Altstadt. Dinner from 18:00; kitchen closed Tuesdays and Wednesdays. Tasting menus from approximately EUR 85; à la carte EUR 30-70. Smart-elegant dress required. Reservations essential.
