Salzburg’s wheat beer brewery on Rupertgasse in the Neustadt. Die Weisse brews its own unfiltered Weissbier on-site and serves it in a large traditional beer hall to a crowd that is, by some margin, the most local you will find in the city.

The Story

Salzburg’s beer story is usually told through Stiegl and Augustiner. Both are large, both are excellent, and both have substantial tourist profiles. Die Weisse is the third institution, the one that does not appear on most tour-group itineraries, and it is the one where you are most likely to sit next to a Salzburg student or a local family at an ordinary Tuesday evening.

The brewery sits at Rupertgasse 10 in the Neustadt, the right-bank residential district that runs north from the old city. It has been here since the late 19th century, brewing wheat beer in a tradition that belongs more to the Bavarian south than to the lager culture that Stiegl and the major Austrian breweries represent. Weissbier, the top-fermented wheat style, is made with a specific yeast that produces banana and clove notes and leaves the beer naturally cloudy with suspended yeast. Die Weisse’s unfiltered version is as close to the source as you can get: brewed in the building, served in the hall attached to it, consumed the same day.

The beer hall is large and lively, the food is hearty Austrian pub cooking at fair prices, and the summer beer garden extends the capacity outside when the weather allows. The fifteen-minute walk from the Altstadt across the Salzach is the practical filter that keeps the tourist ratio low. Most people doing the Cathedral and the Fortress do not continue this far. The ones who do are rewarded with something the Altstadt cannot provide: an evening out in Salzburg that does not feel staged for their benefit.
