The Story
Enzian schnapps occupies a specific place in the alpine spirits tradition. It is not made from fruit, like most central European schnapps, but from the roots of yellow gentian, a tall flowering plant that grows on alpine slopes above the treeline. The roots take decades to develop sufficient size to harvest. They are dug by hand. The resulting spirit is intensely bitter and herbal, with an earthy depth that has very little in common with the plum and apricot schnapps found across Austria and Bavaria.
Grassl is the name associated with this spirit in the Berchtesgadener Land. The distillery on Salzburger Straße has been producing Enzian schnapps here longer than any other operation in the region, and the brand has become a reference point: if someone in this part of the Alps is talking about Enzian, they are probably talking about Grassl.
The distillery itself is not a destination in isolation; it is a stop. The road between Salzburg and Berchtesgaden or the Königssee passes through this stretch of the Salzach valley. The distillery shop is open for tastings, and the full range of Grassl spirits is available, including aged and seasonal variants beyond the flagship Enzian.
