The Story

Enzian Schnaps begins with a plant that few people have seen growing. The yellow gentian (Gentiana lutea) grows above 1,500 metres in the alpine meadows of the Salzburg region and across the broader Eastern Alps. It takes years to develop a root large enough to harvest. The roots are dug by hand under strict regulation, because the plant is slow-growing and vulnerable to over-collection.

The distillate from those roots is intensely bitter. There is no sweetness in Enzian, no fruit character, nothing soft; just a clean, herbal bitterness that sits at the back of the throat and then slowly resolves into warmth. It is drunk in small shots, traditionally as a digestif after a substantial meal or as a warming measure after time in cold air on the mountain.

Destillerie Grassl, near Berchtesgaden just across the Salzburg-Bavaria border, is the oldest and most celebrated Enzian distillery in the region. Their bottles are the benchmark against which regional variations are measured. In Salzburg, Sporrer on Getreidegasse carries a selection of regional Schnaps including several Enzian varieties.
