The Story
Most things described as ancient are not. Stiftsbäckerei St. Peter is the exception. The oldest documented reference to a bakery at this location dates to 803 AD, which places its founding in the reign of Charlemagne, before the concept of Austria existed, before the archbishopric had its current form, before almost every institution that shapes the city today.
The oven has not stopped since. That is the fact that requires a moment to absorb. The same wood-fired stone oven that was heating in the early ninth century is the oven that baked bread this morning. Not a restoration, not a replica: the original structure, maintained and in use for twelve centuries.
The bakery operates out of the Stiftsökonomie buildings, the practical complex attached to St. Peter's Abbey, just beside St. Peter's Cemetery. The transaction itself is modest: a small counter, bread on a shelf, a few euros changing hands. The sourdough, shaped and baked in the medieval tradition, is the thing to buy. There is nothing theatrical about the experience. The astonishing part is the context you bring to it.
Kapitelplatz sits just outside the entrance, and the abbey church, the cemetery with its rock-cut catacombs, and the base of the Hohensalzburg funicular are all within a few minutes' walk. The bakery fits naturally into any circuit of the south Altstadt.

Located at Kapitelplatz 8, beside Petersfriedhof and Stift St. Peter, in the south Altstadt of Salzburg. Open Mon, Tue, Thu, Fri 7am-5pm; Sat 7am-1pm. Closed Wednesday and Sunday. Fresh bread from approximately 8:45am (Mon/Tue) or 7:45am (Thu-Sat). A loaf costs a few euros. No booking required; visit takes 10-15 minutes.
