An organic restaurant and bar on the Mönchsberg, connected to the Humboldtterrasse viewing platform. A less formal alternative to M32 with the same elevation, better views at sunset, and a 100% biodynamic menu.

The Story

The Humboldt Stubn sits on the Mönchsberg at Gstättengasse 4-6, directly connected to the Humboldtterrasse, the historic cliff-edge viewing platform named after Alexander von Humboldt, the German naturalist who visited Salzburg in the early 19th century. The terrace holds 70 people. On a clear evening, the view covers the Altstadt rooftops, the Cathedral dome, the Fortress, and the Alps beyond.

In late 2022 the venue rebranded as Humboldt Bio-Restaurant and Bar, shifting to a 100% organic and biodynamic sourcing model certified by Lacon AT-BIO-402. The biodynamic philosophy goes further than organic certification: it links farming practice to seasonal cycles and lunar rhythms, a position derived from Rudolf Steiner’s agricultural lectures. The Humboldt Stubn sources its vegetables, wines, and dairy from farms operating on these principles.

The menu reflects this: Austrian-Bavarian dishes made with biodynamic produce, a brunch programme that draws locals on weekend mornings, and a wine list that includes biodynamic producers from the Wachau and elsewhere. The interior divides into two rooms, 25 and 40 seats, with low-hanging copper lamps and dark wood in a register somewhere between mountain hut and contemporary café.

The Museum der Moderne Monchsberg is adjacent. M32, the museum’s restaurant, offers a sleeker version of the same elevated position. The Humboldt Stubn is the version that closes at midnight on Fridays, welcomes dogs, serves brunch until 14:30, and does not require a reservation for two.

Gstättengasse 4-6, 5020 Salzburg. Accessible from the Altstadt via the path up to the Mönchsberg, or from Anton-Neumayr-Platz. Hours: Mon-Thu 10:30-23:00, Fri 10:30-midnight, Sat 10:00-midnight. Brunch Mon-Fri 10:30-14:30, weekends from 10:00. Kitchen closes earlier than the bar. Check humboldtstubn.at for current schedule. Groups up to 20, children and dogs welcome. Reservation recommended for the terrace after 17:00 on weekends.
