The Mozartkugel that started everything. Konditorei Fürst invented the original chocolate confection in 1890, and still makes every single one by hand at its Alter Markt shop, wrapped in silver-and-blue foil. It has never been sold in supermarkets.
The Story
In 1890, confectioner Paul Furst created a small sphere of pistachio marzipan and nougat, enrobed in dark chocolate, and named it after Salzburg's most famous son. The Mozartkugel became one of the most imitated confections in Austria, and the story of that imitation matters: Fürst never patented the recipe. Within decades, Mirabell and other producers were manufacturing near-identical products at scale. Today, millions of red-and-gold foil Kugeln are sold across Austria annually, none of them Fürst originals.
What distinguishes the real thing is the silver-and-blue foil, the hand-rolling, and the absence of industrial consistency. The Fürst Kugel is slightly irregular in shape because a human made it. The flavour balance of pistachio marzipan, nougat, and dark chocolate is the original formula, unchanged in over a century.
The flagship shop occupies a ground-floor space on Brodgasse, with a terrace opening onto Alter Markt. It is also a sit-down cafe, serving coffee and traditional Salzburg pastries in an interior that has the unhurried quality of a place that does not need to compete. Additional Fürst outlets operate at Mirabellplatz and Mozartplatz, though the Alter Markt location is the original.
The Mozartkugel has become so associated with Salzburg that the distinction between the original and the copies is largely invisible to tourists. That gap is the point: if you are in Salzburg and you want the actual thing, look for silver-and-blue foil, and do not buy it from a supermarket shelf.
Visiting
Located at Brodgasse 13 with a terrace on Alter Markt, in the heart of the Salzburg Altstadt. Open Mon-Sat 8am-8pm, Sun 9am-8pm. Additional locations at Mirabellplatz and Mozartplatz. No booking required. Individual Kugeln cost a few euros each; coffee and pastries run EUR 5-12 per person. The silver-and-blue foil wrapping is the identifier for the handmade original.
